 Chef Chris Goossen's Red Thai Black Cod
Ingredients:
2 tbs. Thai red curry paste
1 tbs. achiote paste
3 tbs. sugar
1 c. coconut milk
2 tsp. soy sauce
2 tsp. rice wine vinegar
4 pieces cod with skin
Combine all ingredients and mix until smooth. Marinate the pieces of cod in the refrigerator with the mixture for 12–24 hours. Brush off the marinade and place the cod onto a non-stick pan with the skin side down. Place in the broiler for 6–7 minutes or until golden brown.
